Thank you again to Fischer Edit for hosting the debut exhibition of the Sweet Science. Up next, the gallery at the Art Institutes International Minnesota. Selected images from the Sweet Science will be exhibited at the Ai gallery from May 5 – June 7, 2012 with an opening reception on Thursday, May 10th from 5pm – 630. Hope to see you there! Ingredients:

Cooking spray

2 cups prepared pancake batter

1.5 tablespoons chopped fresh chives

6-7 slices prepared bacon* (or, let’s be honest, more if you plan to eat some while you are waiting for the cupcakes to finish cooling)

1/4 c. light cream cheese

approximately 2 tablespoons confectioners’ sugar

1-2 tablespoons pure maple syrup

Directions:

Preheat oven to 325 degrees. Prepare mini-cupcake pan with cooking spray.

Mix chives with pancake batter and pour into cupcake tins so they are about 3/4 of the way full. Bake for 10 minutes or until a toothpick inserted into the cake comes out clean. Allow the cupcakes to cool before frosting.

In a bowl, combine cream cheese, and maple syrup. Add confectioners’ sugar 1/2 tablespoon at a time until well blended. Chop or crumble prepared bacon and set aside.

Frost each cupcake with icing and top with crumbled bacon.

* I love to use the shelf-stable or fully cooked bacon. I was skeptical at first — but honestly, I think bacon tastes the best when someone else has to clean up the mess from cooking it. The fully cooked bacon is ready right out of the box.
